Thai Pineapple Fried Rice
I used this recipe. For the "red chili," I went over to the fresh chilis in the produce section and the only "red chili" I saw was a red jalapeño pepper. Well, more than one, but since I'm quoting the singular "red chili" from the recipe I feel like I have to discuss the red jalapeño in singular form as well. YES! Check it out! Got those little tildes over my both my n's there and everything! GOSH I'm cultured! SWEET.... Anyway, don't know if that's what was meant, but that's what I used and it came out great.
I also thought I had shallots, but it turns out I didn't, so the dish was shallot-free. Oh well. So then I thought to put in an onion instead because shallots are basically midget onions so they probably taste the same. Really, though... think about it... donkey + horse = mule, right? Well, this is what I imagine happened:
Onion: "Hey, so... uh... you want to do this?"
Garlic: "No! You're flaky and you make me cry!"
Onion: "Bitch PLEASE.... you're, like, a dollar a dozen; you smell; and even undead blood-sucking creatures of the night won't come near you."
Garlic: (sniffle sniffle... sniffle sniffle sniffle) "I want to have your babies."
... and shallots were born!!! Yay! So anyway, if your recipe has garlic in it and you add onion it's basically like you put shallots in there, anyway... right? RIGHT. Sweet.
Buuuuut yeah, then I forgot to put the onion in, too. The moral of the story, however, is that this is a delicious recipe that's easy enough that even if you screw a few things up, you're fine. I made it post-work and post-beer (obvi... seriously, are you reading this??... wtf...) in about 20 minutes.
Other than that, I got my shrimp at Gelson's because I trust them (always fresh, and I can always just hold out my hands like I'm holding onto an invisible ball and say, "I want... THIS MUCH!" and they get it right on), and I'm really paranoid when it comes to shellfish (bad tapas experience in Menorca... I actually had the tapas dish as a meal, which means I had almost the whole thing myself... note to self: that charming, quaint little tapas place in the alley is NOT a good place to order shrimp).
Annnnd I didn't "roast" my cashews because I'm not I'm not selling nuts in tiny paper bags on a street corner, which is the only time such an activity is appropriate. Annnnd I used reduced sodium soy sauce... soooo I had to put a salt shaker by my plate.
But yeah... other than that stuff... I really liked this! Really tasty, and the combo of the pineapple and curry smells amazing. Will definitely make it again.
