Orange Sandwich Cookies


 I used this recipe.  I've been trying to make citrus-y sweets lately in an effort to kill my sweet tooth and adapt to tart flavors.  And I feel like citrus-y sweets just feel healthier.  Anytime I'd have sweets when I was younger my mom would say something like, "You know what we used to snack on when I was a kid? LEMONS!" (That one's an actual quote. No, seriously. Except she said it in Farsi. And she was not joking.)  One thing you may have noticed... mine don't look quite like the ones in the recipe's pic.  That filling does NOT thicken.  I had extra filling that I put in the fridge and it was finally the right consistency after a couple days, so maybe make it early.  I had let it cool completely and then put it in the fridge to chill for a few  hours before using it.  Even in the morning, I noticed that the leftover filling was same liquid consistency as I ate it by the spoonful out of the pot.  Very strange.  I wasn't even going to blog this one, but flavor-wise I was told it's definitely bloggable... So yeah, consider make the filling early, otherwise the recipe is great.
